Easy Beef Enchiladas

I often buy the canned chicken from Costco to use in a pinch and had always wanted to try their canned beef, but didn't know what to use it for.  Then I came across this fantastically easy recipe using canned beef at Lovin from the Oven.  I'm actually going to use some left-over roast from Sunday this time - until I can make it to Costco.

OH, If I could only convince you guys to let me teach you how to bottle your own meat, as my sister and I have done for so many 100's of others! Not only is it so very convenient to use right off your shelf, but is much yummier than store-bought, no preservatives, and far, far, far less expensive than even Costco! You name it, you can bottle it - good for 15 years!!!
