Apricot Chicken
Want an easy dinner that everyone will love? Try this Apricot Chicken recipe from Becky at Homemade Happiness. Only 4 ingredients (including the chicken)! I've made this before with 1/2 bottle of Russian dressing, but that's not as easy to find as Catalina and it seems to be pretty much the same. You can also bake this uncovered at 350 for 1-1/2 hours if you didn't think ahead to get it in the crock pot. It won't shred like this, but rather just serve the chicken breast over rice. Simple and delicious!!
