Now, the recipe:
Ingredients: 1 cup oats, 1 cup cottage cheese (yes, I use fat free), and 6 egg whites (lots of times when I'm just making them for my kids I will use 3 whole eggs)
Place all ingredients in blender and blend until totally smooth
Cook 'em up and serve. (I heat my griddle to 350)
Now if I was a professional food photographer or blogger I would have remembered to take a picture of them beautifully displayed. Unfortunately, my boys are sitting "patiently" waiting for me to serve them- no time for beautiful pics.
For a fun variation and some healthy benefits, I sometimes throw a banana in the blender and a handful of frozen blueberries. Yummy!! Also if your batter gets a little too thick, just add a splash of skim milk.

Aunt Evie's Protein Pancakes
1 cup cottage cheese
1 cup oats
6 egg whites
Blend all ingredients until smooth. Cook, serve, and enjoy! Makes 6 good size pancakes (3 fills me up until lunch and each of my kids eat one)

Those sound really good, and healthy! You could also top the pancakes with peanut butter before the syrup for added protein.
These are great. I don't think I ever replied when you sent me this recipe. Sorry, they really are quite wonderful and are great for keeping a level blood sugar :)
