German Pancakes
So, you've probably made German Pancakes before... there are lots of versions floating around out there. In fact, I used to make a different version that was not nearly as good as this one. I know it's a lot of butter, but we don't make it very often (plus, according to Julia Child, butter makes it better, right?).
This recipe is for an 8x8 pyrex, but I always double it for a 9x13 (although the recipe doubled won't fit in my blender, so I actually have to make it twice - good thing it's quick!). Here you go:
1/4 c butter (1/2 stick)
1 1/2 c milk
3/4 c flour
1/3 c sugar
3 eggs
1/4 tsp salt
Preheat oven to 400. Cut butter into small chunks and place in 8x8 baking dish. Place in oven for 5 minutes, or until butter melts. Mix remaining ingredients in blender. Once butter is melted, remove baking dish from oven and immediately pour in blended mixture (Note: if doubling the recipe, I mix one batch, pour it into another bowl, and hurry and make the second batch so they both get poured into the baking dish at the same time).
Return baking dish to oven and adjust temp to 450. Bake 20 minutes. Reduce oven temp to 350 and bake additional 8 minutes or until edges are browned - like this:
Cut into squares and serve! My kids love this best with maple syrup sprinkled with powdered sugar. I love mine with sliced strawberries and brown sugar.

That is so funny because I called your house one day to get the recipe and your hubby read it to me- he never said it was for the square pryex. Mine never turns out as thick as yours and I never cook it for as long- I'll have to give it a try tomorrow in the right size pan.
This looks very yummy. I haven't seen pancakes like these in my entire life though - and I am German. Maybe I missed something. But I'll definitely try these.
