Rolo Cookies


Funny that you can have a recipe for years (I'm talking 8 years) in a cookbook that you use at least once a week, and you skim over it because you think it doesn't sound too spectacular.  That's how it was with this Rolo Cookies recipe from the Favorites cookbook.  My son made them at playgroup and when he brought them home I asked if I could have a bite.  Heavenly!!  Honestly these cookies were the talk of the street for a few days.  If you like chocolate and caramel, I guarantee you will L.O.V.E. these cookies (when my mom tried them at my house she went straight to the store to buy some Rolos so she could make a batch).  Enough blabbing, here's the recipe:

Rolo Cookies (from Favorites)
2 1/2 cups flour
3/4 cup unsweetened cocoa
1 teaspoon baking soda
1 cup sugar
1 cup brown sugar
1 cup butter
2 eggs
2 teaspoons vanilla
48 Rolos (one bag-- but please do yourself a favor and buy two bags so that you won't yell at your kids when they eat them while unwrapping)
2 Tablespoons sugar

Unwrap Rolos.
Combine flour, cocoa, and soda and set aside.  Beat sugars and butter until well blended; add eggs and vanilla.  Add dry mixture and blend well.  Shape cookies into small balls.  Press Rolo into center of ball (see picture 1) and cover with dough (see picture 2). Roll cookie in sugar.  Bake on ungreased cookie sheets at 350 degrees for 8-10 minutes, until tops of cookies are slightly cracked.  Cool on racks.

Oh my!!! I seriously am drooling and want to make these RIGHT NOW. Too bad I don't have Rolos in the house and too bad I'm on a diet. SIGH!!!

I used to have a recipe like that but the dough was a cake mix doctored up. It was DELICIOUS! Thanks for reminding me!
