Baked Zucchini with Mozzarella

It's that time of year when zucchini is growing like crazy in my neighbor's yard (honestly we plant at the same time, in the same spots in our yard- on either side of the fence, and she gets earlier production and twice the amount) which means that I get a grocery bag a week filled with yellow squash and zucchini once a week.  I'm always on the hunt for some new recipes to use this summer harvest.  This recipe for Baked Zucchini with Mozzarella from Jamie Cooks It Up! sounds like the perfect side and a great way to eat that zucchini.  I think it would work well with the yellow squash as well.  Yummy!
