Raspberry Cream Cheese Braided Bread
This raspberry cream cheese braided bread looks absolutely delicious!! I can't wait to make this one. seriously. Actually, I wish I had this to eat for breakfast this morning - it reminds me of this delicious pastry ring from a local bakery that we eat on Christmas morning. yum. Short on time (or bread-making skills)? You can totally cheat and use one frozen Rhodes bread loaf (thawed). Thanks to Jamie Cooks It Up! for another inspiring recipe! btw, Jamie - you need to give me lessons for taking great pics of your food... beautiful photos!

Mini Baked Donuts
Ummm... I NEED a donut pan right now; chocolate cake donuts with chocolate frosting are one of my favorite treats. Frieda Loves Bread shares her recipes for Chocolate Cake Donuts, Powdered Donuts, and Mini Crunch Donuts (which I know will be Missy's favorite). Honestly, they all sound SO good- (on a side note, I hate the taste of baking powder in baked goods so I'm really happy she tweaked the recipe to include buttermilk and not baking powder). She says you can make them in a mini muffin tin, but really I NEED a donut pan they're so much cuter. Yummy!

Banana Chocolate Chip Muffins
So I've got some over-ripe bananas I was going to make banana bread with today, but I think I'll make these Banana Chocolate Chip Muffins instead. Don't they look delicious? Thanks to Brooks and Lindsay at Our Family Treat for sharing this fabulous recipe!

Double Chocolate Zucchini Muffins
I know, another zucchini recipe.. but, honestly- to die for!! Yummy!!! Thanks to Jamie Cooks It Up! for this Double Chocolate Zucchini Muffin recipe. Now go take one of the 10 zucchinis you have in your fridge and make a batch!!
P.S. About 5 years ago Missy shared a tip with me about zucchini and shredding it for recipes. Use the shredding feature of your food processor. Don't peel it, just quarter it, shred it on the food processor and you're done REALLY fast. I always shred a few zucchini at a time and then put them in freezer bags in the amount of 2 cups. I never say 'no' to other peoples zucchini and I have my own from my garden- I shred and freeze enough of this veggie that I can use it all winter long.

Speedy Dinner Rolls
Did you know you can make DELICIOUS homemade dinner rolls in less time than it takes for Rhodes rolls to thaw and rise? Not that I have anything against Rhodes rolls - I love 'em... and I love making all sorts of different recipes with them. But these amazing rolls put any frozen roll to shame. This recipe is adapted from the Ivory family Favorites cookbook, available for purchase from the Make-a-Wish Foundation. FYI: I use all 3 of my mixer attachments for this recipe... might sound like a hassle, but it's not - and it's really the best way to mix it - plus, you can just throw them in the dishwasher :)
2 Tbs dry yeast
2 c warm water, divided
1 c instant powdered milk
1/2 c sugar
2 eggs
2 tsp salt
1/2 c butter, softened
6 c flour
In a small bowl, combine 1 cup of the warm water with yeast - set aside. Using the wire whisk attachment, mix remaining cup water, powdered milk, sugar, eggs, salt, and butter with one cup of the flour in mixing bowl. Mix in the softened yeast. Slowly add 2 more cups of flour.
Switch to the paddle attachment and add 2 more cups of flour.
Switch to the dough hook attachment and add the remaining cup of flour. Continue kneading the dough for 10 minutes (15 minutes if kneading by hand).
Place dough in an oiled bowl and cover with dishcloth. Now you're done with the longest part (and it probably only took 20 minutes)!! Let rise until double in size (about one hour).
(sorry about the bad pictures)

Preheat oven to 350 degrees and spray 2 baking sheets with cooking spray... you're ready to make those rolls! Punch down dough (yes, literally) and divide in half. Roll out each half on a floured surface and cut with pizza cutter into 12 pieces - I cut into fourths and then cut each fourth into thirds.
Starting from the outside, roll each segment up crescent-style and place on greased cookie sheet.
No need to let the rolls rise any more - just pop them in the oven (350 deg.) for 12-14 minutes, until golden.

No Yeast Cinnamon Rolls
Yesterday morning I made these super fast Cinnamon Rolls. Not only were they really quick (no yeast=no rising time) but they were also really yummy. I had two little helpers with me and we had them ready to go in the oven in about 40 minutes- I'm thinking it's probably a 20 minute process by myself. This No Yeast Sweet Rolls recipe is courtesy of Our Best Bites. The recipe gives an orange roll filling and glaze recipe, but I had neither an orange or orange juice yesterday so I used my favorite cinnamon filling and glaze recipe.
Cinnamon Roll Filling:
1 stick butter at room temperature
3/4 cup brown sugar
1 Tablespoon cinnamon
Mix together well and spread over rolled-out dough
Glaze:
3 Tablespoons melted butter
2 Tablespoons milk
1 teaspoon vanilla
1 1/2- 2 cups powdered sugar
Whisk together.
P.S. I only had fat-free cottage cheese on hand- it totally worked

Homemade Whole Wheat Bread
Yummy! I absolutely love the smell of fresh, homemade bread. Unfortunately my kids only experience that smell that when we go to Great Harvest- I tried homemade bread one time and I wasn't very successful. This recipe, however, does not sound complicated and the picture of that bread looks so good. Thanks to Mindika Moments for inspiring us to give homemade bread a try.

Twisted Breadsticks
I just LOVE breads! I think they really complete a meal. These twisted breadsticks from Minutes to Spare look so delicious! They would be perfect with soup or pasta or pretty much anything! I like how quick this is to make... give it a try!

Banana Nut Bread
Does anyone else have the problem of their banana bread not cooking in the center? Honestly, one time I kept my loaf in an extra hour and that middle section still never cooked. I've tried mixing my dough more, mixing it less, different recipes... never cooks in the middle. Well, this recipe from Wives with Knives sounds delicious (no baking powder, I hate baking powder in sweet breads) and claims to not fail... can't wait to give it a try.
