Black Bean and Corn Salsa

This delicious black bean and corn salsa is the perfect complement to any southwest or mexican dish.  We had it with these baked taquitos - so yummy together!  It's also great to serve at a party instead of traditional chips and salsa.  Enjoy!!

1 can black beans, drained & rinsed
1 cup frozen corn (no need to thaw - or substitute one can corn)
1/4 c chopped fresh cilantro
1/8 c chopped red onions
2 chopped roma tomatoes (about 1 cup)
1/3 c italian dressing
juice of one lime
1 1/2 tsp ground cumin
salt and pepper to taste

In large bowl, combine beans and vegetables.  Stir in dressing and lime juice.  Add cumin and salt and pepper.  Cover and chill at least 2 hours or overnight.

Baked Zucchini with Mozzarella

It's that time of year when zucchini is growing like crazy in my neighbor's yard (honestly we plant at the same time, in the same spots in our yard- on either side of the fence, and she gets earlier production and twice the amount) which means that I get a grocery bag a week filled with yellow squash and zucchini once a week.  I'm always on the hunt for some new recipes to use this summer harvest.  This recipe for Baked Zucchini with Mozzarella from Jamie Cooks It Up! sounds like the perfect side and a great way to eat that zucchini.  I think it would work well with the yellow squash as well.  Yummy!

Candied Walnut Salad

I love all sorts of nuts, but walnuts happen to be one of my least favorite.  I know, I know - they are one of the best for you - I just don't like them (particularly when someone ruins a perfectly good brownie or cookie by baking them in).  That being said, I ate the most delicious salad at my MIL's house and guess what?  It had candied walnuts in it.  I loved them!

Since eating that salad, I've been craving it and looking for a recipe... well, I found a great one at Our Best Bites.  Click HERE for the recipe... doesn't it look delish??

Homemade Refried Beans

I was telling Missy about making your own refried beans- well, I found where I had seen them: Kira Cooks.  Seems pretty easy, is more economical, and if Kira says they taste better- I believe her.  Here is the recipe and instructions- please note that Kira says she cooks them without the bacon grease :)  These would be the perfect side to the easy beef enchiladas- sounds like the perfect meal to use food in your food storage.
